Vinification of the Piano del Cerro
The Aglianico grapes for this top red wine from Basilicata grow on volcanic soils, which make up the special potential of the Aglianico del Vulture DOC. After harvesting, the grapes are selected twice and the berries are gently separated from the stems. Vinification is then carried out in small oak casks with a total maceration period of 25-30 days. Every 6 hours, the cap of the grape marc (the skins flushed by the CO2 on top) is manually circulated in order to guarantee optimum extraction of colour and aroma. The Piano del Cerro then matures for 24 months in new barriques, in which it also undergoes malolactic acid transformation.
