Grape variety: Primitivo di Manduria.

Vinification: harvest of slightly overripe grapes, destemming-crushing of the grapes, maceration at a controlled temperature for 10-12 days with periodic pumping over. Racking and malolactic fermentation in stainless steel. Aged in first and second pass American and French oak barrels for the next 12 months.

Sensory characteristics: intense ruby ​​red color with violet streaks, intense aroma with the presence of cherry and blackberry jam, impregnated with menthol, slightly spiced tobacco. The sweetness of the spicy component enhances the flavor, with a finish that gives notes of cocoa and coffee. Very persistent, it will continue to evolve for the next 10 years.

Pairing: the great cuisine of Apulia with its meat dishes, also excellent with game cheeses and very seasoned sheep.
