As the top sake from Juyondai, Ryusen is produced by gathering the essence of cold dripped sake over an extended period of time, using the highest grade Yamadanishiki rice polished to 35%, and brewed using ultra low temperature method. This medium-sweet NV Juyondai Ryusen Junmai Daiginjo is elegant and light but with great complexity. It offers super clean and delicate fragrances such as citrus blossom, red and black cherries, peach and steamed rice. It is broad and persistently powerful but softened by its roundness.
